About Other Brewed Alcoholic Beverages

While made from grains, this new genre of sake goes beyond the traditional boundaries of Japanese sake by incorporating secondary ingredients like fruits and herbs, or by being brewed without pressing. Under the Liquor Tax Act, it is classified as "other brewed alcoholic beverages."

This alcoholic beverage is classified under the Liquor Tax Act and is made with a free-thinking approach, not confined by existing categories such as "sake" or "wine." By combining various副原料 (secondary ingredients), we are exploring new flavors by blending traditional techniques.

While based on traditional grain-based production methods, these beverages are characterized by the addition of herbs and spices or the use of secondary ingredients, breaking free from existing frameworks. Please enjoy them as a new genre of alcoholic beverage.

We brew in very small batches, about 100L at a time. We make the best adjustments for each batch depending on the condition of the ingredients, the temperature during fermentation, and the changing seasons, resulting in subtle flavor variations from one lot to the next. Please enjoy this once-in-a-lifetime encounter with a flavor that exists "only at this moment."

Like wine, each vintage has its own unique characteristics due to factors such as the temperature at the time of brewing, the condition of the yeast, and individual differences in the raw materials. Rather than significant differences, you can enjoy subtle changes in expression, such as how the aroma develops or the crispness of the aftertaste.

We apologize, but as this is a limited, one-time production, past lots are available only while supplies last. However, we are striving for an even more refined flavor in the new lot.

"Brewing schedules are announced regularly on our official social media and through our newsletter. Due to small-batch production, new flavors emerge in cycles of approximately one to several months from preparation to completion.

For recipes that received a strong response, there is a possibility that we may brew them again in the same season the following year. However, depending on the condition of the ingredients in that particular year, the sake will have a different "expression unique to that year" than before.

Regarding your order

Cancellations are possible before the shipping process begins. Orders placed by 1:00 PM on weekdays can be canceled until 4:00 PM on the same day, but not thereafter. Orders placed after 1:00 PM on weekdays will be shipped on the next business day, so cancellations are possible until 4:00 PM on the next business day, but not thereafter. Due to the nature of food and beverages, we generally cannot accept cancellations once an order has been shipped.

You can also use smartphone payments (Apple Pay / Google Pay) and bank transfers through Shopify Payments. Please refer to the user guide.

Please report any damage during shipping directly to the shipping company. If the damage is due to our fault, please contact us within 3 days of arrival with photos of the damaged condition. We will promptly arrange for a replacement or issue a refund.

Currently, due to export regulations and quality control concerns for alcoholic beverages, we only ship within Japan. We can ship to proxy companies located in Japan.

How to drink

While chilling it to about 7-10℃ will generally tighten the aroma and make it more delicious, it can also be warmed to serve as jokan (warm sake).

Each product page includes "pairing suggestions." Since our sake often has complex flavors, it pairs well with a wide range of dishes, from simple Japanese cuisine to rich meat dishes.

Store in a cool, dark place such as a refrigerator. If unopened, it can be stored for a long time, but once opened, oxidation will progress, so it is best to drink it within 3 days to 1 week.

It's common to drink sake from a guinomi or ochoko. If you want to enjoy the aroma, we recommend using a wine glass or a glass with a wide rim.

Yes, of course! Especially for those with higher alcohol content, mixing them with soda will make their aroma burst forth, allowing you to enjoy them more lightly as a drink with meals.

Shopping and Returns Inquiries

Due to the nature of food products, we do not accept returns for customer-reasons; however, we will address issues caused by our own errors.

Yes, you can. Please select the gift option when placing your order. We will deliver the item without including any documents that show the price, such as a delivery note.

We apologize, but we are currently unable to accommodate requests for noshi (decorative paper wraps) as they tend to become soggy when shipped by refrigerated delivery.

We can accommodate orders of a single bottle if only a label is required. For custom brewing orders of 100 bottles or more, we can discuss labels and recipes.

To preserve freshness and flavor, all products are generally shipped chilled (refrigerated). During winter, we may sometimes ship by standard delivery.

Yes. We strongly recommend storing it in a refrigerator (around 5°C) away from light, as we deliver a fresh taste.

Although there is no legal expiration date for sake, our brewery recommends consuming it within approximately six months of the brewing date to enjoy it at its "most delicious stage."

This is a component derived from yeast and raw materials, called "ori." There is no problem with its quality. It's up to your preference whether you mix it to enjoy a rich flavor, or let it settle and enjoy only the clear supernatant.
