Uncompromising brewing management monitored by IoT
During the brewing process, fermentation data is monitored 24 hours a day in real-time using IoT technology. All information, such as temperature, humidity, and fermentation status, is captured numerically, and the sake is pressed by bag dripping (shizuku-shu) at the optimal time without fail.
By fusing the intuition of artisans with the latest technology, we maintain the excellence of traditional methods while simultaneously achieving stable and improved quality.
The reason for intentionally choosing "inefficiency": What is Fukurozuri (Shizuku-shu)?
Fukurozuri is a pressing method where the moromi (fermenting mash) is put into sake bags, and only the drops that naturally drip down by gravity, without any pressure, are collected. This method, also known as "shizuku-shu" (drip sake), yields a smaller quantity compared to mechanical pressing.
Despite this, our brewery intentionally chooses this method because by not applying pressure, no unnecessary off-flavors emerge, and only the clear umami inherent in the ingredients can be extracted. Quality over efficiency – this belief produces a silky-smooth taste.

Due to small-batch brewing, even with the same ingredients and recipe, each batch develops its unique character. This is the true charm of small-batch brewing.
Our craft brew, undergoing natural fermentation, results in different flavor profiles for each brewing batch.
