Strawberry Fukurozuri Sake Lees Paste

[Product Description]

Do you have an image of sake lees being dry and having too strong an alcoholic smell?

Our "Strawberry Fukurozuri Sake Lees Paste," born from our brewery, overturns that perception. It's a new kind of sweet sake lees, like a high-quality fruit paste or confiture.

"Strawberry Craft Sake" is brewed in an extremely small 150L tank under strict data management.

Its moromi (fermenting mash) is extracted using the legendary "Fukurozuri" method, where sake bags are hung and the sake drips out drop by drop by natural gravity, without any pressure being applied.

Because it's not forcibly pressed by machines, the rich umami of the sake and the fruity aroma of strawberries are abundantly sealed into this moist, paste-like sake lees.

Enjoy it as an "edible fermented beauty serum" for those concerned about their daily beauty and health, or as a luxurious weekend dessert. We deliver a rare flavor unique to craft breweries, not found on the market.

Why is "Strawberry" x "Fukurozuri" Sake Lees Special?

1. The miraculous "Fukurozuri" method achieves astonishing moistness and a rich flavor.

General sake lees (ita-kasu) are pressed with strong machine pressure, resulting in low moisture content and a plate-like form.

In contrast, the "Fukurozuri" method adopted by our brewery is a very luxurious and labor-intensive process where sake bags filled with moromi are hung, and only the sake that drips down by its own weight is collected.

Because it's not fully pressed, the sake lees retain an abundance of rice sweetness, amino acid umami, and moisture, resulting in a smooth paste-like consistency, much like cream cheese or a supreme dip sauce.

2. Elegant "Strawberry" aroma and natural sweetness.

Plenty of strawberries are used in the brewing process. The ginjo aroma, like melon or banana, produced by the yeast, combined with the sweet and sour aroma of the strawberries themselves, creates a miraculous synergy.

The strawberry aroma that gently spreads the moment you open it overturns the traditional concept of sake lees.

It's characterized by a natural and gentle sweetness derived from rice and fruit, even though no sugar is added.

3. IoT data proves the highest quality fermentation state.

We don't just rely on intuition for brewing sake.

We immerse cutting-edge IoT sensors (TILT) in the tanks and monitor specific gravity and fermentation temperature in real-time on Google Cloud, 24 hours a day.

By quantifying and visualizing microbial activity in 0.1-degree and 1-second increments, we transition to Fukurozuri at the "golden ratio (peak) of fermentation" where the strawberry aroma and umami are most pronounced.

Enjoy the clear taste without any off-flavors, guaranteed by data and technology.

Delicious Ways to Enjoy & Arrange Strawberry Bag-Pressed Sake Lees

Because it's a smooth paste, it dissolves easily, allowing you to create exquisite fermented sweets simply by "spreading" or "mixing" it as is.

Blissful Strawberry Milk Amazake: Dissolve this product in warm milk or soy milk, adding a small amount of honey to taste. The result is a melt-in-your-mouth, rewarding amazake with enhanced strawberry aroma.

Cracker & Cream Cheese Dip: Simply mix cream cheese and this product in a 1:1 ratio. This creates a fruity appetizer that dramatically pairs with wine or champagne.

Topping for Yogurt or Ice Cream: Just a spoonful on plain yogurt or vanilla ice cream adds a deep richness and aroma, transforming it into a dessert worthy of a high-end restaurant.

As a "Grown-Up Sweet" on its Own: Scoop a spoonful and enjoy it directly. You can savor the smooth melt-in-your-mouth texture and the spreading strawberry aroma directly.

We can accommodate your request if specified at the time of order. Please add it to your order from the catalog page.
