A masterful brew, created through a combination of traditional koji-muro (koji making room) and IoT monitoring. We bring you an unprecedented craft doburoku, a fusion of artisan craftsmanship and cutting-edge technology.
The temperature, humidity, and CO2 concentration of the koji-muro, which is vital for doburoku brewing, are monitored 24 hours a day in real-time. By carefully nurturing the koji by hand and managing its condition with data, we consistently achieve a clear sweetness free of impurities and a refreshing acidity.
The harmony between the craftsman's intuition and the precision of data is the source of our uniquely clear flavor.
Fine-tuned temperature control and small-batch brewing are made possible precisely because of our small tanks. Bluetooth sensors installed inside the tanks record changes in specific gravity and liquid temperature minute-by-minute, allowing us to press the doburoku at the optimal time according to its fermentation curve (phase).

Our doburoku undergoes a natural fermentation process, resulting in different flavor profiles for each brewing lot.

Our doburoku is "completely unpasteurized," meaning no heat treatment whatsoever.
Since the yeast remains active in the bottle, its greatest appeal is that the taste changes daily over time.

To release the gas generated during fermentation, the cap is equipped with a special gas vent. Please enjoy the "growth of sake," which changes its expression day by day, from the day it arrives until the bottle is finished.
Please always store upright in the refrigerator. Due to the gas vent in the cap, laying it on its side may cause leakage.
Upon arrival, please immediately refrigerate the bottle upright.
