    "Doburoku is bad for your health, isn't it?"

    We sometimes hear this from our customers.

    When you search for "doburoku" online, you'll find information like "bad for your health" and "drink in moderation," which can make many people worried.

    We understand that concern very well.

    That's why today, from the perspective of a sake brewery that has been brewing doburoku for many years, I would like to explain this simple question as gently as possible.

    To conclude, doburoku itself is not bad for your health.

    What's important is knowing the "right amount."

    As long as you stick to that, doburoku can become a drink that gently accompanies your daily life.

    Why is doburoku said to be "bad for your health"?

    First, let's look at why this idea is so widespread. Once we understand the reasons, solutions will naturally emerge.

    Reason 1: The alcohol content is actually similar to sake

    Doburoku has a gentle sweetness and a smooth texture, making it feel like a "light drink."

    However, its alcohol content is about 12-17%. This is almost the same as sake.

    If you keep drinking it like juice, your alcohol intake will unknowingly increase. This is the main reason why it is said to be "easy to overdrink."

    Unpasteurized raw doburoku has less alcoholic taste

    Because it is not subjected to pasteurization or pressing, raw doburoku's hydrogen bonds remain intact, making the alcohol less perceptible.

    Reason 2: It's rich in nutrients from rice and koji, so it also has calories

    Doburoku is a type of sake that is made without filtering the moromi (fermentation mash).

    Therefore, the umami and nutrients of rice and rice koji remain dissolved in the liquid.

    While this is a great appeal, it also means that it is slightly higher in calories and sugar than other alcoholic beverages.

    It contains about 100kcal per 100ml, which is similar to junmai-shu (pure rice sake).

    Reason 3: What applies to alcohol in general also applies to doburoku

    In other words, it's not that "doburoku is specifically bad for you," but rather that "the general precautions for alcohol apply to doburoku as well."

    Excessive consumption of beer, sake, or wine puts a strain on the body.

    Doburoku is no different—no more, no less.

    Rather, what we want you to know is the charm of doburoku

    Doburoku is a deeply rooted Japanese alcoholic beverage, cherished since ancient times for celebrations and festival nights.

    Because it is unfiltered, it allows you to enjoy the amino acids nurtured by rice, koji, and yeast, as well as ingredients derived from sake lees, making it sometimes called "drinking nutrition"—a truly rich and flavorful drink.

    Within its cloudy white liquid are packed the sweetness of each grain of rice and the umami carefully brought out by the koji over time.

    With just one sip, a gentle aroma and sweetness spread softly.

    As brewers, we feel every day that this is why doburoku has been loved for hundreds of years.

    The important thing is to know "the right amount for you."

    In February 2024, the Ministry of Health, Labour and Welfare released "Guidelines for Healthy Drinking" for the first time.

    This is a kind of guide for each person to consider how to best associate with alcohol.

    A key point in these guidelines is to consider "pure alcohol content (g)" rather than just the amount of alcohol (ml). The calculation is very simple:

    Pure alcohol content (g) = Amount consumed (ml) × Alcohol percentage (%) ÷ 100 × 0.8

    For example, if you enjoy one go (180ml) of doburoku with 15% alcohol content, the pure alcohol content will be approximately 21.6g. The guidelines state that the amount at which the risk of lifestyle-related diseases begins to increase is 40g or more per day for men and 20g or more for women.

    This is not a "permission to drink up to this amount," but rather a guideline that says, "be careful if you exceed this."

    Converted to doburoku with 15% alcohol content, this would be just under one go for women and just under two go for men.

    Since everyone has different alcohol tolerance and physical condition, we hope you will listen to your body and find the right amount for you.

    From us, who have been deeply involved with doburoku for many years, here are some small suggestions for enjoying it comfortably.

    • Enjoy it with a meal. Drinking on an empty stomach is harder on your body. Having food with it makes it gentler. Doburoku pairs well with Japanese cuisine, as well as Western appetizers like cheese and prosciutto.
    • Keep water (chaser) nearby. A glass of doburoku next to a glass of water. This alone can significantly change how you feel the next morning.
    • Take two days off a week. Your liver needs a break too. Deciding on "no-drinking days" makes the days you do drink even more enjoyable.
    • Please refrain from drinking if you are not feeling well or are taking medication. Don't push yourself. Doburoku isn't going anywhere; we'll see you when you're feeling better.
    • Not for pregnant or nursing individuals, or those under 20 years of age.
